Jajangmyeon: A lower carb Vegetarian version
Here's a Lower carb vegetarian take on a Korean favorite ( the original has delicious pork belly). It has a nutty, beany, slightly sweet & earthy flavor to it, hope you enjoy.
Serves 2
Jajangmyeon:
- 1/2 Container Firm Tofu Cubed
-1-2 Zucchinis Spirilized
-1 cup Daikon Radish Cubed
-1/2 Medium Onion Diced
-1 Cucumber Julienned
-1-2 Tbsp Fermented Black Bean Paste (Warning: these usually contain wheat flour)
-Cooking Oil
-Sesame oil (optional)
Instructions:
1. Heat oil in pan on medium, add daikon & onion, saute for 5 minutes
2. Add tofu & black bean paste, combine & lower the heat. Cook for 10 minutes until daikon is tender & no longer bitter. Tip: if the sauce is reducing too quickly lower the heat or add a little water or oil.
3. Once everything is cooked, add sesame oil to taste, turn of the heat & toss in the zucchini zoodles combing well. Garnish with cucumber & serve immediately.
