Tuna Melt

                                                     Simple. Cheap. Quick & Delicious!

-1 can/5oz Tuna or salmon (liquid strained out)
-1 Egg
-1 Tbsp Mayo (optional)
-4 Slices Sharp cheddar cheese
-1/3 Small Onion diced
-1 Tbsp Parmesan cheese
-Onion & Garlic powder to your liking
-Pinch of salt
-Coconut Oil

Heat skillet on medium-low heat & add a few Tbsp of oil. In a bowl beat egg then combine tuna, parmesan, spices & onion with a fork. If it looks too wet skip the mayo. If not, add mayo to moisten it up. When your pan is hot make four patties with your hands, one at a time. Lay in skillet evenly spaced and cook until edges start to brown. Flip with a stiff spatula. Because these tend to stick take your time to work the spatula fully under the patty before flipping. They should be deep golden brown. Cook other side & move to plate when done. Top each with a slice of cheese. If cheese isn't melted enough pop'em in the microwave for 15 seconds to melt the cheese. Enjoy!



Tips:
-If working on a teflon non-stick pan you probably won't need as much oil. If using stainless steel oil generously. Also because coconut oil is pretty thin & incorporates into food quickly, you'll probably need to add more as you cook.

-When buying canned tuna always read the ingredients. Most canned tuna has soy in the oil or vegetable broth. Salmon is usually soy free but a bit more expensive.

-You can skip the cheese altogether, top the tuna patties with avocado & tomato for a Paleo option.
